1-2-3-4 Cake
Southern classic, legendary for its easy-to-remember ratios, the 1-2-3-4 Cake gets its name from the quantities of its main ingredients: one cup of butter, two cups of sugar, three cups of flour, and four eggs. It includes baking powder, milk, and vanilla, making it a staple for the baker.
Ingredients
- 1 cup (2 sticks) unsalted butter, melted
- 2 cups granulated sugar
- 3 cups all-purpose flour
- 4 large eggs
- 1 tablespoon pure vanilla extract
- 1 tablespoon baking powder
- 1 cup milk
Instructions
- Preheat oven to 350F.
- Butter and flour two 8-inch metal cake pans (to make a two-layer cake) or one 9x13-inch pan (to make a sheet cake).
- Whisk dry ingredients (including sugar) together in one bowl and wet ingredients in another.
- Stir together just until the flour disappears and the batter is thick like a milkshake.
- Pour batter into prepared pan(s).
- Bake until the cake(s) are golden on top and a toothpick inserted into the center tests clean, about 40 minutes.
- Transfer cake(s) to a wire rack to cool for 10 minutes; turn upside down onto a wire rack to cool for 10 minutes; turn upside down onto a wire rack and let rest until cooled completely. When cool to the touch, cover with frosting. If you baked two layers, frost the top of one cake, then stack the second cake on top and cover with frosting.
