Cranberry Salsa with Cream Cheese and Crackers

                Ingredients

                • 12 oz fresh cranberries
                • 1/2 cup granulated sugar
                • 1/2 small red onion, finely chopped
                • 1 jalapeño, finely chopped
                • 1 cup cilantro leaves, finely chopped
                • 1 large garlic clove, minced
                • 1 large lime, juiced
                • 1/2 tsp salt
                • 16 oz cream cheese, softened
                • Crackers (gluten free if desired, to serve)

                Instructions

                1. Add all ingredients, except cream cheese, to a food processor. Pulse until very finely chopped.
                2. Place the mixture in the fridge to chill for at least 30 minutes before enjoying.
                3. To serve, top each cracker with cream cheese and salsa, or let people assemble their own.
