Dutch Apple Raisin Pie

                Ingredients

                • 1 1/2 cups raisins
                • 1/2 cup water
                • 1/2 cup sugar
                • 1 tablespoon flour
                • 1/2 teaspoon cinnamon
                • 1/4 teaspoon salt
                • 1 tablespoon lemon juice
                • 4 cups pared and diced apples (4 to 6)
                • Pastry for a 2-crust, 9-inch pie
                • 1 lightly beaten egg
                • Sugar for garnish

                Instructions

                1. In a large saucepan, boil raisins and water until liquid is almost absorbed, about 5 to 7 minutes. Meanwhile, in a small bowl mix sugar, flour, cinnamon and salt.
                2. Stir into raisin mixture with lemon juice and apples. Turn into a pastry-lined 9-inch pie pan. Cover with top crust, cutting slits for steam to escape.
                3. If desired, brush with egg and sprinkle with sugar. Bake in a preheated 425-degree oven for 10 minutes; reduce heat to 350 degrees and bake 45 to 55 minutes longer or until pastry is golden brown. Serve warm or cold.
