Curried Rice

A savory curried rice dish, perfect as a side for beef and vegetable kabobs.

Instructions
Bring water to a rapid boil in a saucepan. Add rice, salt and shortening.
Cover and cook on low heat for 22 minutes without raising the lid.
Meanwhile, melt butter in skillet.
Sauté onions, celery, and mushrooms until slightly browned.
Remove from heat.
Stir in celery, onions, and mushrooms with the butter from skillet, and add curry powder.
Turn into greased casserole.
Bake at 325°F for 20 minutes.
Serve with beef and vegetable kabobs.
