Scrambled Egg Casserole
A hearty scrambled egg casserole with bacon, mushrooms, and cheese, topped with breadcrumbs.
Ingredients
- 1 cup cubed ham or crumbled bacon
- 1/4 cup chopped green onion
- 3 tablespoons melted oleo
- 12 eggs, beaten
- 4 ounces sliced mushrooms, drained
- Cheese sauce (follows)
- 1/4 cup melted butter
- 1 3/4 cup soft bread crumbs
- 1/8 teaspoon paprika
Instructions
- Sauté ham or bacon and onion in 3 tablespoons oleo in large skillet until onion is tender.
- Add eggs and cook over medium-high heat, stirring from large soft curds (soft scrambled).
- When eggs are set, stir in mushrooms and cheese sauce.
- Spoon into greased 13x9x2 inch pan.
- Mix 1/4 cup melted butter and bread crumbs; sprinkle over eggs.
- Sprinkle with paprika.
- Cover and chill overnight.
- Uncover and bake at 350°F for 30 minutes or until heated thoroughly.
