Scrambled Egg Casserole
A hearty scrambled egg casserole with bacon, mushrooms, and cheese, topped with breadcrumbs.

Sauté ham or bacon and onion in 3 tablespoons oleo in large skillet until onion is tender.

Add eggs and cook over medium-high heat, stirring from large soft curds (soft scrambled).

When eggs are set, stir in mushrooms and cheese sauce.

Spoon into greased 13x9x2 inch pan.

Mix 1/4 cup melted butter and bread crumbs; sprinkle over eggs.

Sprinkle with paprika.

Cover and chill overnight.

Uncover and bake at 350°F for 30 minutes or until heated thoroughly.
