Spinach Soup
A hearty and comforting soup made with ham, spinach, sour cream and potatoes. Save the hambone from Easter or Thanksgiving and make this soup. Serve with warm rolls and a sprinkle of shredded cheddar cheese on top.
Ingredients
- 1 ham bone
- 3 boxes frozen chopped spinach
- 8 oz sour cream
- 2-3 small potatoes
- 2 tablespoons flour
Instructions
- Put ham bone in pot and cover with water. Bring to boil, then turn down burner and simmer.
- Defrost the frozen spinach and put in pot with ham bone.
- Peel a couple of potatoes and cut in small pieces and put in pot with ham bone and spinach.
- Simmer for a while and check to see if potatoes are cooked. Once potatoes are soft, add the sour cream.
- Take a bowl and put the sour cream in the bowl. Add about 2 tablespoons of flour and whisk till flour dissolves.
- Using a big bowl, put a ladle of soup in the sour cream and flour. Stir around to make smooth. Do this to prevent curdling.
- Once the sour cream and flour mixture is lukewarm you can put in in the soup.
- Simmer soup while the flour thickens the soup a little. The soup should be smooth without any lumps of sour cream or flour.
- Serve with warm rolls and a sprinkle of shredded cheddar cheese on top
