Ingredients
- 2 1/4 cups warm water (105-115°F)
- 2 tablespoons active dry yeast
- 1 tablespoon sugar, divided
- 2 teaspoons coarse salt
- 5 1/2 cups Gluten Free all-purpose flour
Instructions
- In a small bowl combine 1/2 cup of the warm water, yeast and 1 teaspoon of the sugar. Stir just to combine and cover overnight with plastic wrap.
- Let the mixture stand about 15 minutes, or until it blooms and gets bubbly or foamy.
- In a large mixing bowl beat the flour, salt and the remaining 1 teaspoon of sugar, yeast mixture and 1 3/4 cups warm water with a wooden spoon until totally combined and smooth, about 1 minute.
- Spray a baguette pan generously with cooking oil. Spoon half of the dough into each side of the baguette pan, forming a baguette with the spoon. Cover with plastic wrap sprayed with baking oil and let rise until double about 20 to 30 minutes.
- Preheat an oven to 450°F. Place the baguettes on the middle rack with a pan of water on the lowest rack of the oven to create steam. Bake baguettes for 15 minutes, brush with butter (you can use butter or I will use avocado oil).
- Lower the heat to 400°F, not air, hot air makes them brown too quickly. Continue baking for 10 more minutes. Cool on wire rack.
