                Ingredients

                • 2 1/4 cups warm water (105-115°F)
                • 2 tablespoons active dry yeast
                • 1 tablespoon sugar, divided
                • 2 teaspoons coarse salt
                • 5 1/2 cups Gluten Free all-purpose flour

                Instructions

                1. In a small bowl combine 1/2 cup of the warm water, yeast and 1 teaspoon of the sugar. Stir just to combine and cover overnight with plastic wrap.
                2. Let the mixture stand about 15 minutes, or until it blooms and gets bubbly or foamy.
                3. In a large mixing bowl beat the flour, salt and the remaining 1 teaspoon of sugar, yeast mixture and 1 3/4 cups warm water with a wooden spoon until totally combined and smooth, about 1 minute.
                4. Spray a baguette pan generously with cooking oil. Spoon half of the dough into each side of the baguette pan, forming a baguette with the spoon. Cover with plastic wrap sprayed with baking oil and let rise until double about 20 to 30 minutes.
                5. Preheat an oven to 450°F. Place the baguettes on the middle rack with a pan of water on the lowest rack of the oven to create steam. Bake baguettes for 15 minutes, brush with butter (you can use butter or I will use avocado oil).
                6. Lower the heat to 400°F, not air, hot air makes them brown too quickly. Continue baking for 10 more minutes. Cool on wire rack.
