Remy's Ratatouille
A delightful mixed vegetable dish inspired by the classic French recipe, brimming with flavor and topped with parmesan cheese.

Ingredients
- 1/2 8oz of tomato sauce
- 1/2 onion, chopped
- 2 tbs of chunky garlic
- 1 small eggplant, sliced
- 1 small yellow squash, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- Fresh grated parmesan cheese
- Olive oil
- Salt
- Pepper
Instructions
- Preheat your oven to 375 degrees.
- Stir together your onion, garlic, and tomato sauce.
- Spread into the bottom of a pan.
- Line all of your chopped veggies in your dish.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Cover your veggies with a piece of parchment paper.
- Bake for 30-45 minutes.
- Sprinkle with cheese and serve!
