Remy's Ratatouille

                A delightful mixed vegetable dish inspired by the classic French recipe, brimming with flavor and topped with parmesan cheese.

                Ingredients

                • 1/2 8oz of tomato sauce
                • 1/2 onion, chopped
                • 2 tbs of chunky garlic
                • 1 small eggplant, sliced
                • 1 small yellow squash, sliced
                • 1 red pepper, sliced
                • 1 yellow pepper, sliced
                • Fresh grated parmesan cheese
                • Olive oil
                • Salt
                • Pepper

                Instructions

                1. Preheat your oven to 375 degrees.
                2. Stir together your onion, garlic, and tomato sauce.
                3. Spread into the bottom of a pan.
                4. Line all of your chopped veggies in your dish.
                5. Drizzle with olive oil and sprinkle with salt and pepper.
                6. Cover your veggies with a piece of parchment paper.
                7. Bake for 30-45 minutes.
                8. Sprinkle with cheese and serve!
