Avocado Corn Salad
A refreshing and flavorful salad with cherry tomatoes, avocado, corn, red onion, and a zesty lime dressing, perfect for a healthy side dish.

Ingredients
- 1 cup cherry tomatoes
- 3 cups corn (best if roasted)
- 2 avocados, diced
- 1/2 red onion
- 1/4 cup cilantro
- 2 1/2 tbsp extra virgin olive oil
- 3 tbsp lime juice
- 3 garlic cloves, pressed
- 1 tsp sea salt
- 1/8 tsp black pepper
- Optional: black beans, chicken, quinoa
Instructions
- In a large bowl, combine tomatoes, corn, avocados, red onion, cilantro, black beans, chicken, or quinoa (if using).
- In a small bowl, whisk together extra virgin olive oil, lime juice, pressed garlic, sea salt, and black pepper.
- Pour dressing over the salad ingredients and gently toss to combine.
