                Ingredients

                • 1 cup cherry tomatoes
                • 3 cups corn (best if roasted)
                • 2 avocados, diced
                • 1/2 red onion
                • 1/4 cup cilantro
                • 2 1/2 tbsp extra virgin olive oil
                • 3 tbsp lime juice
                • 3 garlic cloves, pressed
                • 1 tsp sea salt
                • 1/8 tsp black pepper
                • Optional: black beans, chicken, quinoa

                Instructions

                1. In a large bowl, combine tomatoes, corn, avocados, red onion, cilantro, black beans, chicken, or quinoa (if using).
                2. In a small bowl, whisk together extra virgin olive oil, lime juice, pressed garlic, sea salt, and black pepper.
                3. Pour dressing over the salad ingredients and gently toss to combine.
