Egg O'Muffin
A classic breakfast sandwich featuring toasted English muffins layered with buttery cheese, poached or fried eggs, and Canadian bacon or ham.

Ingredients
- 2 doz English muffins, toasted
- 4 oz margarine
- 2 doz eggs, poached or fried
- 24 slices Canadian bacon or 12 oz ham, thin sliced
- 24 slices American cheese or 12 oz cheddar cheese, shredded
Instructions
- Toast and butter English muffin halves.
- Cover bottom half of English muffin with 1/2 oz sliced American or shredded cheddar cheese.
- Add 1 poached or fried egg, then top with 1/2 oz slice of Canadian bacon or ham.
- Cover with top half of English muffin. Serve warm.
