Egg O'Muffin

                A classic breakfast sandwich featuring toasted English muffins layered with buttery cheese, poached or fried eggs, and Canadian bacon or ham.

                Ingredients

                • 2 doz English muffins, toasted
                • 4 oz margarine
                • 2 doz eggs, poached or fried
                • 24 slices Canadian bacon or 12 oz ham, thin sliced
                • 24 slices American cheese or 12 oz cheddar cheese, shredded

                Instructions

                1. Toast and butter English muffin halves.
                2. Cover bottom half of English muffin with 1/2 oz sliced American or shredded cheddar cheese.
                3. Add 1 poached or fried egg, then top with 1/2 oz slice of Canadian bacon or ham.
                4. Cover with top half of English muffin. Serve warm.
