Lasagna Rolls

                Delicious lasagna rolls filled with cottage cheese, Parmesan, and optional spinach, topped with spaghetti sauce and mozzarella.

                Ingredients

                • 1 jar spaghetti sauce, divided
                • 9 lasagna noodles, cooked and cooled
                • 1 (24 oz) container cottage cheese
                • 1 egg
                • 1/4 cup Parmesan cheese
                • 1 tbsp parsley flakes
                • 1/2 tsp black pepper
                • 1/2 tsp garlic salt
                • 1 cup frozen spinach (optional)
                • 3 cups shredded mozzarella cheese, divided

                Instructions

                1. Preheat oven to 350°F.
                2. Pour half of the spaghetti sauce in a 9x13 baking dish.
                3. Mix all filling ingredients except 1 cup mozzarella cheese.
                4. Spread filling on a lasagna noodle and roll up.
                5. Place roll in dish; continue with all noodles.
                6. Top with remaining sauce and mozzarella.
                7. Bake for 30-40 minutes.
