                Ingredients

                • 1 tablespoon unsalted butter
                • 1 small onion, finely diced
                • 2 garlic cloves, minced
                • 1/2 teaspoon paprika
                • 1/2 teaspoon ground coriander
                • 1/2 teaspoon cayenne pepper
                • 1/4 teaspoon ground turmeric
                • 1 1/2 teaspoon kosher salt
                • 6 ounces baby spinach
                • 1/4 cup heavy cream
                • 1/4 cup grated Parmesan
                • 1/4 cup plain dry bread crumbs
                • 2 large egg yolks
                • 1/2 teaspoon freshly ground black pepper
                • 1/2 cup coarsely shredded sharp cheddar cheese, divided

                Instructions

                1. Preheat the oven to 400°F.
                2. Heat butter in a large skillet.
                3. Add the onion, garlic, paprika, coriander, cayenne, turmeric, and 1 teaspoon salt, cooking until onion is soft.
                4. Add the spinach in batches, cooking until wilted.
                5. Stir in the cream, Parmesan, bread crumbs, egg yolks, black pepper, and remaining 1/2 teaspoon salt.
                6. Divide the mixture among mushrooms, sprinkle with cheddar cheese.
                7. Drizzle with olive oil and bake until the mushrooms are soft and the cheese is browning, 12 to 15 minutes.
