Creamed Spinach-Stuffed Mushrooms
Large, meaty mushrooms stuffed with a savory blend of creamed spinach and breadcrumbs, perfect as an appetizer or side dish.
Ingredients
- 1 tablespoon unsalted butter
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground turmeric
- 1 1/2 teaspoon kosher salt
- 6 ounces baby spinach
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan
- 1/4 cup plain dry bread crumbs
- 2 large egg yolks
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup coarsely shredded sharp cheddar cheese, divided
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F.
- Heat butter in a large skillet.
- Add the onion, garlic, paprika, coriander, cayenne, turmeric, and 1 teaspoon salt, cooking until onion is soft.
- Add the spinach in batches, cooking until wilted.
- Stir in the cream, Parmesan, bread crumbs, egg yolks, black pepper, and remaining 1/2 teaspoon salt.
- Divide the mixture among mushrooms, sprinkle with cheddar cheese.
- Drizzle with olive oil and bake until the mushrooms are soft and the cheese is browning, 12 to 15 minutes.
