Creamy Cajun Chicken Pasta
A zesty Cajun-style pasta with creamy chicken, vegetables, and delightful spices.
Ingredients
- 8 ounces whole-wheat fusilli or rotini
- 1 tablespoon canola oil
- 2 slices bacon, chopped
- 1 large sweet onion, halved and thinly sliced
- 1 pound boneless, skinless chicken breast, trimmed and cut into 1-inch pieces
- 1 medium green bell pepper, sliced
- 3 cloves garlic, minced
- 4 teaspoons Cajun seasoning
- 1/2 teaspoon freshly ground pepper
- 1 tablespoon all-purpose flour
- 1 28-ounce can crushed tomatoes
- 1/3 cup reduced-fat sour cream
- 1/2 cup sliced scallions for garnish
Instructions
- 1. Bring a large pot of water to a boil. Cook pasta until just tender, 8 to 10 minutes or according to package directions. Drain.
- 2. Heat oil in a large skillet over medium-high heat. Add bacon and cook, stirring, until crispy, about 4 minutes. Transfer to a paper towel-lined plate, leaving the bacon fat in the pan.
- 3. Add onion to the pan and cook, stirring, until softened, about 5 minutes. Add chicken, bell pepper, garlic, Cajun seasoning, and pepper. Cook, stirring occasionally, until the chicken is no longer pink inside, about 5 minutes.
- 4. Sprinkle flour over the chicken and vegetables while stirring. Add crushed tomatoes and bring to a simmer, scraping any browned bits from the bottom of the pan. Reduce heat to maintain a low simmer, cover, and cook until the sauce thickens, 5 to 7 minutes.
- 5. Stir in the cooked pasta and sour cream until combined. Adjust seasoning to taste.
- 6. Serve garnished with scallions.
