Pepped Up Potato Salad
This pepped-up potato salad is best made hours before serving because it takes awhile to get the flavor through.


Ingredients
- 1 1/2 tsp mustard seed
- 1 tsp celery seed
- 3 Tbls. vinegar
- 1 1/2 tsp salt
- 1/2 C finely chopped green onions & tops
- 5 C diced cooked potatoes
- 3/4 C mayonnaise or salad dressing
- 2 chopped hard cooked eggs
Instructions
- Soak seeds in vinegar overnight.
- Add potatoes and mix lightly.
- Add mayonnaise, onions & chopped eggs, toss to mix.
- Chill thoroughly, trim with hard cooked egg wedges and paprika.
