Pepped Up Potato Salad

                This pepped-up potato salad is best made hours before serving because it takes awhile to get the flavor through.

                Ingredients

                • 1 1/2 tsp mustard seed
                • 1 tsp celery seed
                • 3 Tbls. vinegar
                • 1 1/2 tsp salt
                • 1/2 C finely chopped green onions & tops
                • 5 C diced cooked potatoes
                • 3/4 C mayonnaise or salad dressing
                • 2 chopped hard cooked eggs

                Instructions

                1. Soak seeds in vinegar overnight.
                2. Add potatoes and mix lightly.
                3. Add mayonnaise, onions & chopped eggs, toss to mix.
                4. Chill thoroughly, trim with hard cooked egg wedges and paprika.
