Spinach Casserole

                Ingredients

                • 2 pkgs frozen chopped spinach
                • 2 eggs, beaten
                • 1/2 onion, finely minced
                • 1 can mushroom soup
                • 1 cup grated sharp cheese
                • 1/2 cup mayo

                Instructions

                1. Boil, drain, and salt the spinach.
                2. Add eggs, onion, soup, cheese, and mayo.
                3. Put in a buttered casserole dish.
                4. Mash crackers, mix with butter to lightly cover top.
                5. Bake at 350°F for 45 minutes to 1 hour.
