Lasagna Rolls

                A delicious twist on traditional lasagna, featuring rolled lasagna noodles filled with a cheesy spinach mixture.

                Ingredients

                • 1 jar spaghetti sauce, divided
                • 9 lasagna noodles, cooked and cooled
                • 1 (24-oz.) container cottage cheese
                • 1 egg
                • 1/4 cup Parmesan cheese
                • 1 Tbsp. parsley flakes
                • 1/2 tsp. black pepper
                • 1 tsp. garlic salt
                • 1 cup frozen spinach (optional)
                • 3 cups shredded mozzarella cheese, divided

                Instructions

                1. Preheat oven to 350°F.
                2. Pour half of the spaghetti sauce in a 9 x 13 baking dish.
                3. Mix together all filling ingredients except 1 cup of mozzarella cheese.
                4. Place 1 lasagna noodle on a cutting board and spread the entire length of the noodle with filling.
                5. Roll up like a sleeping bag and lay in pan.
                6. Continue until all 9 noodles are rolled.
                7. Top with remaining sauce and mozzarella cheese.
                8. Bake at 350°F for 30-40 minutes.
