Apple and Concord Grape Crumble Pie
A delightful mix of tart apples and sweet Concord grapes topped with a crumbly oat topping.
Ingredients
- 1 3/4 pounds/794 grams tart apples (such as Granny Smith)
- 2 tablespoons granulated sugar
- 2 tablespoons unsalted butter
- 3 cups/690 grams Concord grapes
- 2/3 cup/132 grams granulated sugar
- 3 tablespoons/22 grams all-purpose flour
- 1 teaspoon fresh lemon juice
- 1 recipe Single-Crust Pie Dough (page 247)
- 1/2 teaspoon flaky sea salt
- 1 recipe Crumble Topping (page 249)
Instructions
- Peel and core apples, cut into chunks, mix with 2 tablespoons of sugar.
- Cook apples in butter over medium heat for about 15 minutes. Allow to cool.
- Wash grapes and remove from stems.
- Simmer grapes in a saucepan, strain to separate juice from solids, reduce juice over medium heat.
- Combine cooled apples with reduced grape liquid and flour.
- Preheat oven to 375 F (190 C).
- Prepare pie dough as per recipe, and place in the pie pan.
- Sprinkle sea salt over the dough.
- Add apple and grape mixture into the dough-lined pan.
- Prepare crumble topping as per recipe, and sprinkle over the fruit filling.
- Bake on the lower oven rack until crust and topping are golden brown, about 1 hour 30 minutes.
- Allow to cool before serving.
