Sambar Recipe

                A traditional South Indian Sambar recipe involving a variety of spices, toor dal, and vegetables, perfect for serving with rice, idli, or dosa.

                Ingredients

                • 1 handful Toor Dal
                • Water as needed for boiling dal
                • Salt to taste
                • 1 pinch Turmeric Powder
                • 1 tbsp Tamarind Juice
                • 1 1/2 tsp Chili Powder
                • 1 tbsp Oil
                • 1/2 tsp Mustard Seeds
                • 1/2 tsp Fenugreek Seeds
                • 1/4 tsp Hing (Asafoetida)
                • 2 to 3 Dry Red Chilies
                • Few Curry Leaves
                • 2 Tomatoes
                • 1 Onion
                • Vegetables of choice
                • Chopped Coriander Leaves for garnish

                Instructions

                1. Boil a handful of toor dal until fully cooked and mash it.
                2. In a cooking vessel, add 1 tablespoon of oil.
                3. Add 1/2 teaspoon mustard seeds and let them crackle.
                4. Add 1/2 teaspoon fenugreek seeds.
                5. Add a few curry leaves.
                6. Add 1/4 teaspoon hing and let it sizzle.
                7. Add 2 to 3 dry red chilies and sauté.
                8. Add chopped onion and tomatoes, and cook until soft.
                9. Add the mashed toor dal to the cooking vessel.
                10. Add 1 tablespoon tamarind juice.
                11. Add 1 1/2 teaspoon chili powder.
                12. Season with salt to taste.
                13. Add water according to desired consistency (thick or diluted sambar).
                14. Bring to a boil and let simmer on medium flame.
                15. Garnish with chopped coriander leaves before serving.
