Egg Dairy Oatmeal Cake

Ingredients
- 1 1/4 cups boiling water
- 1 cup oatmeal
- 1/2 cup butter
- 1 cup sugar (white)
- 1 cup brown sugar
- 2 eggs
- 1 1/3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp vanilla
Instructions
- Pour boiling water over oatmeal, cover, and let sit for 20 minutes.
- Cream butter, sugars, and eggs.
- Add oatmeal and dry ingredients, mixing until well integrated.
- Bake in a 350°F (175°C) oven for 54 minutes.
