                • 1 1/4 cups boiling water
                • 1 cup oatmeal
                • 1/2 cup butter
                • 1 cup sugar (white)
                • 1 cup brown sugar
                • 2 eggs
                • 1 1/3 cups flour
                • 1 tsp salt
                • 1 tsp baking soda
                • 3/4 tsp cinnamon
                • 1/4 tsp nutmeg
                • 1 tsp vanilla

                Instructions

                1. Pour boiling water over oatmeal, cover, and let sit for 20 minutes.
                2. Cream butter, sugars, and eggs.
                3. Add oatmeal and dry ingredients, mixing until well integrated.
                4. Bake in a 350°F (175°C) oven for 54 minutes.
