No-Bake Granola Bars

                Ingredients

                • 2 cups old-fashioned oats
                • 1/2 cup quinoa
                • 1/4 cup chia seeds
                • 3/4 cup creamy almond butter
                • 1/4 cup honey
                • 2 tbsp olive oil
                • 3/4 tsp Kosher salt
                • 3/4 cup pitted prunes, pureed (about 1/2 cup)
                • 1/2 cup sliced almonds
                • 2 oz dark chocolate, chopped (about 1/2 cup)

                Instructions

                1. Line a 9-by 13-inch baking pan with parchment, leaving an overhang. In a large bowl, combine oats, quinoa, and chia seeds.
                2. In a small saucepan on low, heat almond butter, honey, oil, and 1/2 tsp salt until melted and smooth, stirring occasionally. Stir in pureed prunes. Pour almond butter mixture over oat mixture and stir to combine.
                3. Fold in almonds, chocolate, and chopped prunes. With wet hands, spread the mixture onto a prepared baking pan to 1/4-inch thickness. Refrigerate until set, about 1 hour. Cut into 16 bars. Store in an airtight container in the fridge for up to 3 weeks.
