No-Bake Granola Bars
No time in the morning? Stash a batch of these filling make-ahead bars in the fridge and you’ll be set to grab and go all week.
Ingredients
- 2 cups old-fashioned oats
- 1/2 cup quinoa
- 1/4 cup chia seeds
- 3/4 cup creamy almond butter
- 1/4 cup honey
- 2 tbsp olive oil
- 3/4 tsp Kosher salt
- 3/4 cup pitted prunes, pureed (about 1/2 cup)
- 1/2 cup sliced almonds
- 2 oz dark chocolate, chopped (about 1/2 cup)
Instructions
- Line a 9-by 13-inch baking pan with parchment, leaving an overhang. In a large bowl, combine oats, quinoa, and chia seeds.
- In a small saucepan on low, heat almond butter, honey, oil, and 1/2 tsp salt until melted and smooth, stirring occasionally. Stir in pureed prunes. Pour almond butter mixture over oat mixture and stir to combine.
- Fold in almonds, chocolate, and chopped prunes. With wet hands, spread the mixture onto a prepared baking pan to 1/4-inch thickness. Refrigerate until set, about 1 hour. Cut into 16 bars. Store in an airtight container in the fridge for up to 3 weeks.
