Chickpea Cookie Dough

                This no-bake chickpea cookie dough is meant for enjoying raw, not for baking. It is sweetened naturally with medjool dates and rich in fiber and protein.

                Ingredients

                • 1 1/2 cups cooked chickpeas, or 1 (15-ounce) can, drained and rinsed
                • 2/3 cup medjool dates, pitted (about 8 large dates)
                • 1/4 cup unsweetened almond milk
                • 1/2 cup almond butter
                • 1/2 teaspoon ground cinnamon
                • 1/4 teaspoon salt
                • 1/2 cup dark chocolate chips

                Instructions

                1. Combine the chickpeas, dates, almond milk, almond butter, cinnamon, and salt in a food processor. Process until smooth, scraping down the sides as needed.
                2. Transfer the dough to a small bowl and stir in the chocolate chips.
                3. Serve immediately with fresh fruit for dipping, or cover and refrigerate until ready to serve.
